Finally got my sausage recipe right after a year of tweaks
Last month in my shop in Spokane, a regular told me it was the best he's ever had. Anyone else have a recipe that took forever to dial in?

Took me three years to nail my grandma's biscotti, so I feel that.

Three years? That's a crazy long time. I would have given up after like six months tops. What kept going wrong with them?

Grinding on a recipe that long shows real dedication. My smoked ribs took almost two years to get right. The smoke ring was easy, but getting the meat to pull clean off the bone without being dry was the hard part. @blair_torres70, the problem kept changing each time I tried. Too salty, then too sweet, then the bark wouldn't set right. Finally got the rub and wrap timing down. That first perfect batch makes all the failed ones worth it.
