Can we talk about how my friend's blunt feedback changed my pour over game?
My buddy Mark, who runs a small roastery in Portland, tried my coffee last month and said 'dude, your water is way too hot, you're burning the good stuff'. I was using boiling water straight from the kettle for my V60. I started letting it sit for a full minute off the boil, and the difference is crazy, way more sweetness and less bitterness. Anyone else get a simple tip that made a huge difference like that?

Water temp is a game changer, but grind size is the other half. I was getting sour shots for weeks until someone told me to go way finer than I thought. The puck looked like mud but it fixed the problem overnight. Dialing that in made more difference than any fancy gear.

My first pour over was so bitter I thought I'd brewed a cup of regret. Turns out my grind was way too coarse and I was basically just making brown water. Getting that right fixed more than any expensive bean ever could.
