Just found out about temping my water for pour over
I always just used boiling water straight off the stove and wondered why my coffee tasted bitter. Tried letting it sit for 30 seconds after boiling and it made a huge difference in smoothness, like night and day. Anyone else have a simple trick they overlooked for too long?

Same tbh, I was doing the exact dumb thing with boiling water for way too long. @logan271 that tip about stirring the bloom gentle is gold, I started doing that last month and it helped a ton with the flavor coming through cleaner.

That "stir the bloom gentle" thing you mentioned @logan271, do you use a spoon or just swirl the brewer?

Read something from a barista once who said to let it rest 45 seconds for light roasts and up to 90 seconds for dark ones. Tried it with a darker blend I had and it really cut down that ashy taste. Also saw a tip to stir the bloom real gently instead of just pouring water on top, seems to help the grounds release gas more evenly. Small stuff like that adds up way more than I expected.
