Used to be the type who thought grind size was just personal preference for espresso. Watched a buddy pull shot after shot with watery results until a barista pointed out his too-fine grind was choking the machine. Changed my whole view on how important that little detail actually is lol.

Dude the "too-fine grind choking the machine" part hit home hard. I ruined a whole bag of beans once thinking I was getting better extraction by going finer and finer. My machine started taking like 45 seconds to pull a shot and it came out all bitter and syrupy. A buddy finally told me to back way off on the grind and suddenly I got this nice 28 second pull with real crema. It's wild how one little adjustment changes everything from sink shots to something you actually want to drink.
