Unpopular opinion: That 3-inch herringbone border in the Portland kitchen remodel took me 8 hours to get right, not the 2 I quoted.

The subfloor had a subtle slope I missed, and every piece needed a custom miter cut, so has anyone else had a simple accent detail blow up a timeline like that?

That slope is a killer. I always run a long level corner to corner before I even think about layout now. Learned that after a similar disaster with a chevron pattern in a bathroom, cost me a full day of recuts.

Honestly how much time does that really add though? Tbh I've done plenty of floors and never bothered with that extra step. It seems like overkill unless the floor is insanely bad. I just snap a center line and go from there. Maybe you just had one really messed up slab.

Sounds like a waste of time to me.
