My early vegan brownies were like eating sweet bricks
Back then, I just mixed flour, sugar, and oil, and they came out dense and dry. These days, I add black beans or avocado for moisture, and they turn out fudgy and rich. It's a total shift from basic mixes to knowing how ingredients work together. I really appreciate how recipe testing has changed things.

Yeah the "trial" part is always so fun, like accidentally burning dinner three times. The "error" part is just me staring at a smoke alarm. Really builds character.
