Seems like we're losing touch with basic problem-solving in all sorts of areas, not just with machines. @torres.riley getting hands-on with that truck is a perfect example of why that direct experience matters. I mean, idk, maybe it's just me but even cooking from a recipe all the time means you never learn to improvise when you're out of an ingredient. It's the same with following GPS instead of learning your way around a city. We're trading understanding for convenience, and it's making us less able to handle surprises.

But if the bread turns out bad, how can his old way be fine? Rushing kneading ruins the gluten structure every time. You need to show him side by side how his fast loaf looks versus a properly made one. Let him see and taste the difference so it clicks for him. Good bread needs time, and your regulars know it.
