Stop putting raw chicken wings straight in the basket
I see so many people just dumping raw wings in the basket and then complaining they're greasy or the skin is rubbery. You have to pat them bone dry with paper towels first, then toss them in a bowl with a tablespoon of baking powder and your spices. The baking powder pulls moisture out and makes the skin crisp up like crazy. I learned this after a batch of soggy wings for a game night last month. What's your go-to trick for getting that perfect crispy skin?

Honestly I was so sure the baking powder thing was just a weird internet hack. Tried it last week and it was a total game changer, the skin got so crispy it was almost like fried chicken. I used to just throw them in with a dry rub and wonder why they steamed. Now I won't even start the grill without that step.

Totally agree about the baking powder trick. My wings used to come out soggy every single time, no matter how long I cooked them. Following a tip online, I tried a light dusting of baking powder with salt and let them sit in the fridge on a rack overnight. The difference was crazy. The skin got so crisp and bubbly, just like you said. It really does change everything.

Did you try it with or without a wire rack?
