Started putting everything in writing upfront with a simple scope document, then charged hourly for any changes after that. Never had a problem since.

Any chance the silicone just wasn't food-grade quality even though they charged top dollar? I've noticed a lot of those boutique kitchen shops in Portland slap a high price on stuff that's basically the same cheap imports you'd find on Amazon. @owens.laura, you're right about old metal pans being tanks, but I think the real trick with silicone is you have to look for platinum-cured silicone or it's gonna break down fast. That sticky peeling you described is a dead giveaway it was regular silicone mixed with fillers to save money.

It's funny how we think the modern world has everything figured out, but the second you dig into old records, you realize half our systems are still held together by paper and memory from decades ago. Makes you wonder what else is quietly running on ancient info that nobody bothered to update.
