I just hit 100 completed anime on my list and the number of 'meh' shows was way lower than I expected

Honestly, that makes total sense. Once you get past the first fifty or so, you get way better at picking stuff you'll actually like. You learn what studios or writers to follow and what tags to avoid. It stops being about just watching anything and starts being about watching the right things for you. The "meh" pile shrinks because your taste gets sharper.

Check your list for sequels and spin-offs. A lot of those "good" entries might just be the same show counted twice.

Wait, you're totally right. I just looked and they counted three different "Law & Order" shows as separate great shows. That's basically the same show with a different focus.
