My cake layers came out lopsided and I think I fixed it

I was baking a 3-layer chocolate cake for my sister's birthday last Saturday and two of the layers came out of the oven with a big dome on top. I thought it was just my oven running hot at 350, but then I realized my baking soda was from 2022 and probably dead. I leveled them with a serrated knife and the cake looked fine, but the crumb was kinda dry. Has anyone else had old leavening mess up their layers like that?

My friend's cookies turned into frisbees with expired baking powder.

Expired baking powder actually gives cookies a nice dense chew, way better than those puffy bakery ones.

My first batch with old baking powder turned out like rocks last year, so I thought it was useless. But @mason_murray8, your description of a dense chew actually makes me want to give it another shot with a different recipe. I'm thinking a shorter bake time with chilled dough might balance out that flatness into something more like a soft, chewy cookie.
