Man I used to be all about beans being the ultimate budget food. Then I actually looked at my last grocery bill. A bag of dried beans is cheap, but you need a ham hock, some good broth, veggies, and it cooks for hours. I got a whole rotisserie chicken for less, ate the meat for two days, and made soup from the carcass. The energy cost alone for simmering beans all afternoon adds up.

My pressure cooker changed the bean math for me. A pound of chickpeas cooks in 45 minutes without needing to watch it, and I just use water, salt, and a bit of oil. You're right about the rotisserie chicken being a great deal, but I still keep beans in the rotation for the days I want a meatless meal. The trick is keeping the extras simple so the cost stays low.

Yeah, the energy cost thing is a real hidden tax. I started using a slow cooker for beans overnight when rates are lower. But you're right, that rotisserie chicken is a total cheat code for cheap meals. What other "budget" foods actually end up costing more when you factor in everything?
