Old school butchery wasted so much, now we use every bit
I learned from chefs who would toss out bones and trimmings without a second thought. These days, my kitchen turns those into stocks, sauces, and even staff meals. It's a small change, but it cuts down waste and saves cash. Kinda funny how what was once trash is now a key part of our daily prep.

My buddy's shop renders beef fat into tallow for frying. They use it for all their deep-frying. Even connective tissues get simmered into gelatin-rich broths. Those broths form the base for sauces and soups. Turns waste into premium stuff. Saves cash and makes food taste better.

Reminds me of when my uncle would save bacon grease for cooking. Made everything taste amazing, and we never threw anything out. Kinda miss that old school way of doing things.

Turns waste into premium stuff" is the real magic trick. I tried saving bacon grease once but forgot it on the stove. My kitchen smelled like a sad diner for a week. Makes you respect the pros who actually know how to do this stuff right without setting off every smoke alarm in the zip code.
