Oh man, that bakery story is brutal and I am so sorry that happened to you. It's like they saw a low price and thought "great, we can boss this person around as much as we want." I completely get that feeling of working for peanuts and still getting a bad review, it's a special kind of insult on top of injury. Your time and skill are worth more than $6 an hour, no doubt about it. It's a hard lesson but a necessary one, and it sounds like you learned it the hardest way possible. Solidarity from a fellow freelancer who has been there way too many times.

PSA: Stop asking me to tenderize your ribeyes

Honestly, I feel you on this. A buddy of mine used to work at a butcher shop in San Antonio and he'd tell me the same thing. People would bring in prime cuts and beg him to pound them flat, it drove him crazy. You're totally right, ribeyes have that beautiful marbling that makes them tender on their own if you just cook them right. It's like people think tenderizing is a magic fix for everything, even when the steak is already perfect.

Contractor promised me a flat subfloor and lied through his teeth

The glue float trick is a classic one. I had a GC in Tucson try to sell me on that same line for a gluedown job, said the adhesive would magically fill a 1/2 inch depression if I just packed it in thick. I leveled my straightedge on his desk and he went quiet real fast. It's wild how they'll fight you on something that takes an hour to fix with self leveler, but then you catch them on another job doing it the right way for a different contractor. You were right to walk off. That dip would have been a nightmare in six months with hollow spots and cracked seams.
