My uncle swore by wrapping his ribs in foil after 3 hours, but I tried the 'no wrap' method he laughed at and got way better bark

Foil just steams the bark away. @joseph_green13, tell your uncle to try a water pan instead for moisture. My last rack had a crust you could barely bite through, all from skipping the wrap. The meat stays plenty juicy if you manage your fire right. That sticky, peppery bark is the whole point of smoked ribs.

Your uncle and mine would get along. I used to wrap everything too, but the bark just never got right. Going without that foil made a huge difference for me.

Actually my uncle swears by the foil wrap for the first few hours, @the_rose. He says it keeps the meat from drying out before the bark sets.
