It's getting hard to find a place that serves a proper roast without avocado on top
I've been cooking for over twenty years, and lately, all I see are menus full of trendy items like avocado toast and kale salads. Even the diner down the street added a quinoa bowl last week. It feels like every chef is just copying what's popular online instead of using local ingredients. I remember when we had seasonally changing menus based on what farmers brought in. Now, it's all about Instagram appeal. How do we get back to cooking that actually tastes good? What's your take on this trend?

Hold on, that's not really how it works. Chefs at trendy spots are all about their new ideas. Asking for a plain old roast goes against what they're trying to do. It's like going to a sushi bar and asking for a burger. You're better off finding a place that already does the classic right.
