But what happens when the client moves the goalposts at the last minute... you can't always control their side of things. Building in buffer time is smart, but sometimes the urgent stuff is truly out of your hands, like a server going down. How do you actually enforce those boundaries when saying no could mean losing the client for good?

Totally get the ruined sweatpants thing. That paint tray cleanup is a special kind of messy battle nobody needs. The grid trick sounds perfect for those little jobs where you just need a dab of paint. Might have to grab one for myself next time I'm at the store.
