inHad a line cook tell me to stop salting proteins so early last week
My goofy ass used to season ribeyes like a full hour before cooking, thinking I was being fancy and chef-like. Ended up with these sad, wet steaks that steamed instead of seared. Now I do the salt right as the pan gets hot, maybe 30 seconds before it hits the oil, and I actually get a crust that doesn't look like a soggy paper towel.

inJust figured out why my high-pressure oil pump kept failing
Agree hard with this. Throwing pumps at it without digging deeper is just wasting money and time. Ive seen way too many guys swap three pumps before finding out their HPOP was dumping metal into the system. Cleaning the screen is a temp fix at best, it just delays the real problem. If the system is contaminated from worn injectors or a dying pump, that debris is gonna keep coming back. You might save a few bucks now but youre gonna pay later with another tow bill and more downtime. Better to spend the time checking everything first instead of guessing.

inStop buying cheap fuel filters from that auto parts chain on Route 9
Plastic shavings are a huge red flag, not just a little debris from a bad part. That stuff goes straight into your injectors and can cause serious damage fast. A cheap paper element is one thing, but questionable plastic that flakes apart is a whole different level of risk. Five dollars saved is not worth a multi-thousand dollar injection pump repair down the road.

inThe obsession with moving cost estimates is getting out of hand
Kim's right about checking the water heater date code, that thing cost me $800 my first month.
